These vegan stuffed peppers are filled with perfectly seasoned vegetables and rice in a smokey tomato sauce and topped with dairy free cheese.

Cook your rice on the stove or rice cooker, according to the package directions. Set aside when done.

– Drizzle a little oil over the whole bell peppers and bake, cut side down, for 20 minutes, or until peppers start to slightly soften.

Sauté the vegetables on the stove in some oil. Add seasonings and salt and pepper.

Add the beans and tomatoes and cooked  rice and vegetable broth. Simmer for 10 minutes.

Once the peppers are cooked, stuff them with the rice mixture. Top with vegan cheese and bake until cheese is melted.
