Ingredients

Cook the pasta al dente in a large pot of salted water according to the package instructions.

Strain and then rinse with cold water to bring the cooked pasta to room temperature.

In a large mixing bowl, add all the ingredients for the homemade balsamic dressing and mix well.

Add in the cooked pasta and the fresh veggies to the same bowl and top with vegan feta cheese. Mix everything well

RECIPE TIPS

Let this sit in the fridge for at least two hours before serving, for the best flavor. This tastes even better the next day as leftovers, when it’s had time to marinate in the fridge.
