Place the canned coconut milk in the fridge. Be careful not to shake it. Let it chill for at least 24 hours to help separate the coconut cream from the water.

After the coconut milk has been chilled, open the can from the bottom. Let the water strain out. Scoop out the coconut cream and put in a mixing bowl.

Put the coconut cream in a large mixing bowl. Add the cocoa powder, coconut sugar and vanilla and whip with an electric mixer until everything is smooth and well combined.

In a mixing bowl, mix together the coconut cream, cocoa powder, vanilla and sugar.

In a small mason jar or wine glass, add the chocolate mousse then top with whipped cream. Set in the fridge until ready to serve.
