Easy Thai Curry Noodles with Tofu and Veggies

I am addicted to curry.  There.  I said it.  I can't go a week without having some form of that spicy, deliciousness in my belly.

This recipe is a life-saver because I can make curry any damn time I want.  It's so quick and easy to make.  

As long as you have all the ingredients on hand, it takes less than 20 minutes.  You can easily find all of these ingredients in your local grocery store.

Thai Curry Noodles with Tofu & Veggies

  • 1/2 onion
  • 1/4 cup cilantro stems
  • 4 TBL red Thai curry paste (make sure there's no fish in it)
  • 1 tsp curry powder
  • 1 tsp turmeric
  • 2 TBL coconut sugar or brown sugar
  • 3 cloves of garlic
  • 1 can of light coconut milk
  • 3/4 cup of veggie stock
  • 2 cups of frozen broccoli
  • 2 cups of frozen fajita veggies (bell peppers and onions)
  • 1/2 lime juiced
  • 1 TBL soy sauce
  • 1 package of fettuccine noodles
  • 1 package of extra firm tofu - cubed


1. Heat a pan with oil and saute the onions, cilantro stems, curry paste, curry powder, turmeric and coconut sugar for 8 minutes

2. Add in the coconut milk and veggie stock and let simmer for 5 minutes

3. Add in the cubed tofu, broccoli and fajita veggies

4. Cook your pasta as directed by the box.  Drain and add pasta to the curry.

5.  Add the garlic, lime juice and soy sauce and garnish with cilantro leaves
