Healthy peanut butter and chocolate chip homemade granola

I’ve been buying these little bags of granola bites for a few months now, spending about $4-$5 per bag. A bag that I can easily eat within a few days. I finally smartened up and realized I could just make these suckers at home for a fraction of the cost.
don’t know why I waited so long to make them at home. I guess I didn’t want to bother with them because I was under the false assumption that they would take too long. Boy oh boy was I wrong.
Now I can whip these treats up in five minutes, pop them in the oven and have some delicious, healthy treats ready to go, all under 30 minutes.
Tips for making homemade granola bites
The peanut butter can be a little tricky to mix in with everything, so I found that using my hands was the best way to get them combined well. Using my hands to mix is my favorite part about this recipe.
When looking for a vegan brand of chocolate chips, make sure to read the ingredients. Most have milk in them but some are accidentally vegan. A brand called Enjoy life are always vegan and Kirkland chocolate chips are accidentally vegan. These are nice because you can buy them in bulk and always have them on hand.
If you don’t have a skillet or small baking dish to make these in, just double or triple up the recipe so that you have enough granola to fit in your baking pan of choice.
Make sure the granola is thick enough and packed in so that the bites aren’t too thin. Also let them cool completely before cutting them into bites or bars, they will stick together a lot better.
When to enjoy homemade granola
I absolutely love eating these with my morning coffee. They go perfectly together. Eating a little something with my coffee helps my stomach as well. I never do well drinking coffee on an empty stomach.
These granola bites are also a great, kid friendly snack to pack in you kid’s lunch.

Five ingredient chocolate chip granola bites
- 1 cup old fashioned oats
- ½ cup peanut butter
- ½ cup maple syrup
- 3 tbsp ground flax seeds mixed with 6 TBL water
- ½ cup vegan chocolate chips
- Pre-heat oven 350 degrees
- Mix flax seeds with water and let thicken
- Combine all ingredients in mixing bowl. Mix well
- Put in smaller baking dish or cast iron skillet. Pack down. Make it a small enough dish so that the bites are thick enough.
- Bake for 25-30 minutes
- Let cool completely then cut into bite sized pieces or bars.
