– olive oil  – onion  – celery  – potato  – carrots  – diced tomatoes – Italian seasoning – thyme, cumin smoked paprika, bay leaf – brown lentils – vegetable broth – lemon juice

Ingredients

Add oil to a large pot on medium heat. Once the oil is warm add the chopped onions and saute for 10 minutes.

Add the rest of the ingredients, minus the kale and lemon juice and bring the soup to a low simmer. Simmer for 30-35 minutes, or until lentils are soft

Once lentils are cooked through, turn the heat off and add in the chopped kale and fresh lemon juice. Add more salt and pepper if needed

RECIPE TIPS

This soup will last in an airtight container in the fridge for up to five days.  This soup also freezes well. Store it in a freezer friendly container for up to three months.
