Easy vegan deviled eggs made with potatoes and tofu. Perfect vegan appetizer to bring to a party and share with your friends. You will be amazed how much these taste like eggs!

Small yellow potatoes Extra firm tofu Vegan mayo Mustard Black salt (kala namak) Garlic powder Onion Powder Paprika

Ingredients

Boil the potatoes whole, in a large pot of water then let them cool completely. Overnight  in the fridge is best

Cut the potatoes in half and gently scoop out the insides with a spoon or melon baller. Add the potato flesh to a mixing bowl.

Pat the tofu dry then press it to get rid of excess moisture. Tear up into small pieces.

Add the tofu to the mixing bowl with the insides of the potato that you dug out. Add the seasonings, mustard and vegan mayo.

Take the filling and add it into the pockets you dug out of the potatoes. Top with paprika.

RECIPE TIPS

If you want to make the filling smooth like a deviled egg, blend the filling ingredients in a food processor, or mash them with a potato masher.
