This quinoa black bean salad is an easy, healthy side dish. Full of fresh ingredients hearty black beans and bright flavor thanks to the olive oil and lime vinaigrette.

– Quinoa (rinsed) – Vegetable broth  – Black beans  – Avocado – Cherry tomatoes – Red onion – Fresh cilantro – Corn – Olive oil – Fresh lime juice – Salt to taste

Rinse off quinoa in a fine mesh strainer to help get rid of its bitter taste.

Rinse off quinoa in a fine mesh strainer to help get rid of its bitter taste. Add it to a pot with vegetable broth and cook.

While the quinoa is cooking, chop up and prepare all of the vegetables.

Once quinoa has cooked, let it cool to room temperature. Add quinoa and veggies to a serving bowl and mix. Top with lime juice, olive oil and salt to taste.

RECIPE TIPS

This lasts in an airtight container in the fridge for up to five days.  This is also a great salad topper. Add it to your lettuce based salads.
