Prepare all your veggies, dice your onions, carrots, potato and mince your garlic and set aside.

Add oil to your pot or instant pot. Sauté the vegan chicken until crispy and lightly brown.

Add the onions and sauté until translucent. Then add the rest of the vegetables and sauté for five minutes.

Cancel sauté mode and add the lid. Set the pressure nob to seal. Pressure cook on high for three minutes. Quick release after the three minutes are up
