Easy vegan granola bites

Easy, healthy and delicious five ingredient chocolate chip granola bites. Make in under 30 minutes. Perfect sweet treat to eat with coffee.

Ingredients

  • 3 cups old fashioned oats
  • ¾ cup peanut butter
  • ½ cup maple syrup
  • 3 tablespoons ground flax seeds mixed with 3 tablespoons of water
  • ¼ teaspoon salt
  • ½ cup vegan chocolate chips

Instructions

  • Pre-heat oven 350 degrees
  • Make your flax egg by mixing the ground flax with water and stir. Let it sit for 5 minutes. Combine all ingredients in mixing bowl. Mix well. Spread onto an oiled baking sheet. Spread the granola out and push the mixture down into the pan so it covers the whole pan.
    3 cups old fashioned oats, ¾ cup peanut butter, ½ cup maple syrup, 3 tablespoons ground flax seeds, ½ cup vegan chocolate chips, ¼ teaspoon salt
  • Bake for 30-40 minutes, or until the outer parts of the granola start to turn golden brown.
  • Let cool completely. Cut into bars or bite sized pieces.

Notes

  • The peanut butter can be a little tricky to mix in with everything, so I found that using my hands was the best way to get them combined well. Using my hands to mix is my favorite part about this recipe.
  • When looking for a vegan brand of chocolate chips, make sure to read the ingredients. Most have milk in them but some are accidentally vegan. A brand called Enjoy life are always vegan and Kirkland chocolate chips are accidentally vegan. These are nice because you can buy them in bulk and always have them on hand.
  • If you don’t have a skillet or small baking dish to make these in, just double or triple up the recipe so that you have enough granola to fit in your baking pan of choice.
  • Make sure the granola is thick enough and packed in so that the bites aren’t too thin. Also let them cool completely before cutting them into bites or bars, they will stick together a lot better.
