- 1 bag Fajita Blend Vegetables
- 1 package Fajita or Taco Seasoning
- Chipotle or Smoked Paprika
- 1 tablespoon Olive Oil
- 8 white mushrooms optional if you don't like them
- 1 can Black Beans
- Tortilla
Creamy Vegan Sauce
- 3 tablespoon Vegan Mayo
- 1 tablespoon Vinegar
- ¼ teaspoon salt
- 1 teaspoon garlic powder and dried dill
- 1-2 tablespoon water or unsweetened vegan milk to thin it out
Put the Fajita Blend vegetables, mushrooms and black beans into a mixing bowl.
Pour in the spices and the olive oil and mix well
Put on an oiled baking sheet and bake at 325 for 30 minutes, stirring halfway through
At the very end, throw your tortillas on the tray for 3-5 minutes to warm them up
Voila! You're done! Assemble the fajita filling in your tortilla and top with toppings of your choice including the Vegan Creamy Sauce
