Baking Sheet Fajitas

You'll be in and out of the kitchen in no time and leave full and satisfied. This is a quick, easy vegan recipe that is great for a busy weeknight.

Ingredients

  • 1 bag Fajita Blend Vegetables
  • 1 package Fajita or Taco Seasoning
  • Chipotle or Smoked Paprika
  • 1 tablespoon Olive Oil
  • 8 white mushrooms optional if you don't like them
  • 1 can Black Beans
  • Tortilla

Creamy Vegan Sauce

  • 3 tablespoon Vegan Mayo
  • 1 tablespoon Vinegar
  • ¼ teaspoon salt
  • 1 teaspoon garlic powder and dried dill
  • 1-2 tablespoon water or unsweetened vegan milk to thin it out

Instructions

  • Put the Fajita Blend vegetables, mushrooms and black beans into a mixing bowl.
  • Pour in the spices and the olive oil and mix well
  • Put on an oiled baking sheet and bake at 325 for 30 minutes, stirring halfway through
  • At the very end, throw your tortillas on the tray for 3-5 minutes to warm them up
  • Voila! You're done! Assemble the fajita filling in your tortilla and top with toppings of your choice including the Vegan Creamy Sauce

To Make Vegan Creamy Sauce

  • Mix together all ingredients
  • Add a little bit of water or vegan milk at a time until you get the consistency you desire.
