Easy Air Fried Sweet Potato Cubes
Easy and delicious air fryer sweet potato cubes. Perfectly crispy on the outside and tender on the inside. Makes a great side dish to any meal, or put it on top of salads or in tacos.

- 1 large sweet potato
- 1 tablespoon coconut oil or avocado oil
- ½ teaspoon garlic powder
- ⅛ teaspoon salt
Peel then dice the sweet potatoes. Add them to a large mixing bowl and add the oil, salt and garlic powder.

Add sweet potatoes to the air fryer making sure not to overcrowd it. Cook this in batches if needed. Roast at 400 degrees for 15-20 minutes, shaking the basket halfway through. If you want your potatoes more crispy, let them cook a little longer.
Serve as a side dish to any main course, or put them in salads, buddha bowls, tacos or breakfast skillets.
Make sure not to over crowd the air fryer. It will make it so the sweet potatoes don't get crispy on the outside. Cook this in batches if you need to.
These are best eaten fresh out of the air fryer. They will slowly lose their crispiness as they cool down.
Feel free to play around with other seasonings. Some of my favorite are
- Cinnamon

- Maple syrup
- Smoked paprika
- Chili powder
- Cumin powder
- Onion powder
- Curry powder
