FRENCH TOAST WITHOUT EGGS

– 1 cup soy milk (or whatever plant milk you have on hand) – 1 tsp ground flax seeds (or ground chia seeds) – 1 tbsp vanilla – 1 tbsp maple syrup – 2 tsp cinnamon – ¼ cup corn starch – 6-8 slices thickly sliced bread (Texas toast, ciabatta or french) – 2-3 tbsp vegan butter (or oil – for frying)

In a large bowl, mix together the soy milk, vanilla, cinnamon, corn starch, maple syrup and ground flax seeds.

Once everything is mixed well, let the mixture sit for 5 minutes to let the flax seeds thicken up the mixture.

Stir up the mixture before dipping the bread in the mixture to make sure the corn starch isn't collected at the bottom.

Get some thickly sliced bread and dip it in the mixture for 5 seconds on each side, or until well coated.

Heat a frying pan on medium low heat and add the vegan butter or oil. Let the pan heat up for at least five minutes before adding the bread.

- Make sure not to soak the bread for too long or it will get soggy. - French toast freezes well. Just pop it in a toaster oven when ready to eat.
