Ingredients

Heat a large pot or dutch oven over medium heat and add oil. Add the onion and sauté until lightly golden brown.

Add the seasonings and garlic. Stir well and cook for 1-2 minutes until the spices become fragrant.

Add the can of fire roasted tomatoes, frozen corn, pasta sauce, salsa, vegetable broth to the pot. Stir everything together.

Add the beans and stir well. Bring the chili to a boil, then reduce the heat to low and let it simmer for 30-40 minutes, stirring occasionally.

After 30-40 minutes, taste the chili and add salt to your preference and adjust seasonings if needed. Top with non-dairy sour cream and chives.
