Heat a large pot,  or dutch oven, add oil, sauté onion for 2-3 mins until fragrant

Add the seasonings and minced garlic to the pot. Stir well and cook for 1-2 minutes until the spices become fragrant.

Add beer, broth, veggies, beans, tomatoes. Uncover and let it simmer until it thickens up. The longer the chili simmers, the more the flavors will meld together

Once the vegetarian chili is done cooking, add a little bit of apple cider vinegar to help balance the flavor.
