VEGAN DEVILED EGGS

Easy vegan deviled eggs made with potatoes and tofu. Perfect vegan appetizer to bring to a party and share with your friends. Gluten free, dairy free and high in protein. Your non-vegan friends and family will love this recipe.

– 10 small yellow potatoes – 1 package of firm tofu (press water out and cut into small cubes) – ¾ cup vegan mayo – 4 tablespoon mustard – 2 teaspoon black salt – 1 teaspoon garlic powder – 1 teaspoon onion powder – pinch Paprika to garnish

Keep the potatoes whole, and boil them in a large pot of water until barely fork tender. Let them cool completely in the fridge over night.

Boil the potatoes

Cut the potatoes in half. Scoop out a little bit from the middle of each potato with a small melon baller. Add the insides to a big mixing bowl.

In the mixing bowl, add the tofu to the potato mixture. Add relish, vegan mayo, mustard and seasonings and mash.

Make the filling

Add the filling to the holes in the potatoes. Set on a tray and sprinkle with paprika.
