Plant Powered Minestrone Soup

This easy minestrone soup is cozy, simple, and scrumptious. It's dairy-free and optionally gluten-free, featuring veggies, kidney beans, tomatoes, herbs, and pasta shells.

– onion and garlic – celery stalks  – carrots  – zucchini  – Italian seasoning –  tomato paste – vegetable broth – fire roasted tomatoes – frozen green beans –  pasta shells – kidney beans  – great northern beans 

Ingredients

Heat olive oil in a large soup pot on medium heat. Add the onions and sauté for 5 minutes or until onions start to lightly brown and caramelize

Add the carrot, zucchini, celery and tomato paste to the pot. Sauté for 5 minutes.

Include diced tomatoes, bouillon paste, green beans, Italian seasoning, dried basil, and water. Let it simmer for 15 minutes.

Add dried pasta, garlic, kidney beans, great northern beans and (optional) nutritional yeast and simmer for 10 minutes. 2 minutes before you're done simmering, add the chopped kale.

Turn heat off. Let the soup sit for 5-10 minutes before serving. Drizzle another tablespoon of oil on top and top with dairy free parmesan cheese.
