Ingredients

Easy instant pot red lentil soup. Makes a healthy, high protein plant based dinner idea, perfect for a busy weeknight. Easy, one pot meal idea.

Peel and chop your potatoes and carrots. Mince the garlic and chop up the onions. Rinse the lentil.

Set the instant pot to saute mode. Add some oil. Saute the onions until lightly brown.

Add in the other vegetables and spices and sauté for 3-5 minutes.  Keep stirring to prevent the seasonings rom burning.

Pour in the vegetable broth. Scrape the bottom of the instant pot to make sure to get everything off the bottom.

Add the lid and turn it to seal. Cook on high pressure for four minutes.

Release the pressure and open the lid. Stir in some soy sauce and lemon juice and serve.

RECIPE TIPS

-  Store in an airtight container in the fridge for 5-7 days.  -This freezes well for up to 6 months.  - To make this oil free, use broth instead of oil to sauté
