TENDER VEGAN STEAK

Juicy and tender vegan steak. Made with seitan and super high in protein. Amazing chewy texture and perfectly seasoned. Looks just like the “real thing”. Great for a summer bbq.

– ¾ cup brown or green lentils (or black, kidney or garbanzo beans) – 4 tablespoons tomato paste – ¼ cup nutritional yeast – 1 teaspoon garlic powder – 1 teaspoon onion powder – 4 tablespoons soy sauce – 1 tablespoon dijon mustard – 1 teaspoon liquid smoke (or smoked paprika) – 2 tablespoons tahini (or coconut oil) – ¼ teaspoon salt – ½ cup vegetable broth – 1¾ cups vital wheat gluten

In a food processor or blender, blend together the lentils and all the seitan seasonings until smooth.

Add the vital wheat gluten and wet ingredients from the food processor to a large mixing bowl. Mix well until it forms a ball.

To activate the gluten and make the vegan steak chewy, knead it for no longer than two minutes.

Put the seitan dough on the counter and try to flatten it out. Cut into 4-6 steaks. Flatten each steak with a potato masher.

Add the seitan steaks to a steamer basket and cover. Steam for 20 minutes.

Once the seitan is done steaming, add to a shallow bowl and pour over beef marinade

Add vegan steaks to a hot grill or oiled cast iron skillet. Brush on more marinade when you flip.

RECIPE TIPS

- Tastes great served with steak sauce - Serve with a baked potato and some steamed vegetables -Don't knead for longer than 2 minutes, or it will get too tough.
