Roasted sweet potato, sausage and kale salad (vegan) with BBQ ranch dressing.
I was sifting through my fridge and cupboards this afternoon trying to create a recipe. I wanted something healthy and full of greens, but also savory and delicious. I also wanted it to leave me feeling full and satisfied. I love creating recipes like this. This salad is the perfect mixture of savory deliciousness and healthy greens. I hope you enjoy!

Vegan Roasted Sausage, Sweet Potato & Kale Salad with BBQ Ranch
Ingredients
- 2 Vegan Field Roast Smoked Apple Sage Sausages
- 1 bunch of curly kale (8 stalks)
- 1 avocado
- ½ lemon juiced
- 1 tablespoon soy sauce
- Nutritional Yeast
- 1 large sweet potato
- 1 Red Bell Pepper cut into strips
- ½ teaspoon smoked paprika
- ½ teaspoon garlic powder
Vegan BBQ Cashew Ranch
- 2 cups soaked cashews
- 1 teaspoon salt
- 2 tablespoon apple cider vinegar
- 2 cloves garlic
- 1 lemon juiced
- ½ cup water
- 2 teaspoon each of onion & garlic powder
- 1 teaspoon each of dried dill & parsley
- salt & pepper to taste
- BBQ sauce without honey or anchovies
Instructions
- Peel & cut sweet potato into bite sized cubes
- Lightly steam sweet potato for 5 minutes
- Put sweet potato, bell pepper and chopped vegan sausage on a baking sheet with oil
- Season with smoked paprika, garlic powder and salt.
- Bake @350 for 25 minutes
Assemble Kale Salad
- Rinse and chop kale. Place in bowl
- Hand massage kale with avocado & lemon juice for about 1 minute
- Season with a few sprinkles of soy sauce and nutritional yeast
Vegan BBQ Cashew Ranch
- Put cashews in boiling water for 8 minutes to quickly soak & soften
- Blend everything except the dried herbs
- Stir in dried herbs & BBQ sauce to taste
