Easy one pot vegan meal ideas for camping

I absolutely love camping every summer. We go to Northern Michigan for at least a week at a time. It’s my favorite way to reset, relax and connect with nature.
Every year, I get a little better at it, so I will share what I’ve learned so far, if you’re not sure what to eat as a vegan while camping.
I really love cooking while camping. It’s a relaxing thing for me, but I know it can also be stressful if you have hungry people waiting around. So, here are my favorite, easy, no fuss, one bowl vegan camping foods.
Easy, no fuss vegan camping food ideas that only use one pan:
Campfire cajun beer glazed vegetables
I make this every single time I camp. It’s all in one pan, super easy and really tasty. My must-have vegan camping essential is my cast iron pan. I can stoke a fire and put my pan right over the coals and low flames.
- To make this easier, chop up your veggies ahead of time and store them in a ziplock bag, or tupperware.
- Use whatever veggies you have on hand, but corn, zucchini, tomatoes, onions, mushrooms and beans are my favorite things to go in this.
Mushroom and bell pepper fajitas with refried beans
This is really fun to make over the fire as well. Make this earlier in your trip, because mushrooms can get a bit weird if left in a cooler for too long.
Chop up all the veggies ahead of time to make this easier.
Ingredients:
- package or two of white mushrooms
- 2-4 bell peppers
- 1 red onion
- oil, water or beer to cook veggies in
- Taco seasoning packet
- Can of vegan refried beans (make sure you bring a can opener)
- flour tortillas
- salsa
Directions:
- To make this easier, chop up all the veggies ahead of time and store in a ziploc bag in the cooler
- Place cast iron pan directly into a fire that you've stoked for at least 30 minutes. Make sure flames aren't too high and crazy. It's best to put it over hot coals that have low flames.
- Add 2-3TBL of oil, or ½ cup of water or beer and then all of the veggies and seasoning to the cast iron pan, or whatever pan you’re cooking in.
- Cook for about 20 minutes or until veggies are tender
- Open the refried beans and place refried beans in the tortilla and add the fajita fillings. The hotness of the fajita fillings will naturally warm the beans up.

Veggie burgers or hotdogs with vegetarian baked beans
This is for those nights where you really don’t want to mess around with cooking. Maybe you’ve had a long day of hiking or swimming, and you just want to relax for dinner.
My favorite vegan hot dogs, sausages and burgers are: Beyond sausages and burgers and field roast.
Ingredients:
- Your favorite veggie burgers, or sausages
- Buns
- Vegetarian baked beans (bring a can opener)
- Ketchup, mustard, relish
Just heat everything up, however you wish, and chow down. If I’m camping for a week, I will make these a few times throughout the week.

Vegetable, bean and potato soup
When you add potatoes and beans to this soup, it makes it a lot more filling and then you don’t need as many sides to make you full. You can even make this before you go camping, and just have it ready to be heated up once you’re there. Use your favorite veggies for this, but my favorite are:
Ingredients:
- ½ of a jar of pasta sauce (check to see it’s vegan) - this is a great way to flavor a soup without having to bring a bunch of spices, since the pasta sauce is already flavored. Use more pasta sauce if the soup needs more flavor
- 1 can of kidney beans - drained
- 3-4 small yellow potatoes or a large russet, peeled and diced
- veggies of choice (zucchini, carrots, green beans, peas, onions, bell peppers)
- water
Directions:
- Chop up all the veggies
- put everything into a large pot
- add ½ jar of pasta sauce. Taste the soup after it’s done and add more pasta sauce if it’s bland
- Cover all the veggies with about 2-3” of water
- Cook until veggies are soft. Add salt to taste

Creamy red lentils over rice
I love this recipe because it’s minimal ingredients. The ingredients also keep well in a tent or storage container, before they’re cooked because it’s made of dry pantry items.
I brought my instant pot on a few camping trips and it was such a blast. Made for really easy meals.
If you don't have an instant pot, you can just make this over the fire, or on a gas stove.

- Cast iron skillet right in the fire
- Utensils - I love those camping, all-in-one utensils that fold up
- Mugs
- Plates
- Leftover tupperware (double up as plates or bowls?)
- Can openener
- Cutting board and knives
- Gas stove and pans if you don’t want to cook over the fire
- A large tub to wash dishes in
- Heavy duty oven mitt or fire gloves to handle the cast iron skillet when it gets hot
