    Why You'll Love This Recipe

    • Quick and easy recipe to make in one pan.
    • Use for Thanksgiving dinner, Christmas day, or any cozy Sunday dinner.
    • Uses pantry staples and simple ingredients that can be found in most kitchens
    • Vegan and dairy-free
    • Perfect for Thanksgiving, Christmas, or any cozy Sunday dinner
    • No need to chop onions, or sauté garlic or mushrooms, just throw everything in a sauce pan and enjoy!

    Ingredient notes

    1. Vegetable oil or vegan butter - Any neutral oil can be used in this recipe, such as canola oil, coconut oil or grapeseed oil. Avoid using strong-flavored oils like olive oil, as they can affect the flavor of the gravy.
    2. Nutritional yeast - Nutritional yeast is used to add a nutty, cheesy flavor to the gravy. Be sure to use nutritional yeast and not active dry yeast, as they are not interchangeable.
    3. Soy sauce - Soy sauce adds saltiness and umami flavor to the gravy. You can use tamari or liquid aminos as a gluten-free alternative.
    4. Vegetable broth or vegan no-chicken bouillon cube - I prefer using either Better Than Bouillon’s no-chicken vegan bouillon paste OR Edward & Son’s un-chicken vegan bouillon cube.
    5. Onion powder and garlic powder - These two ingredients add depth of flavor to the gravy without overpowering it. You can use fresh minced garlic and onions if you prefer, but make sure to sauté them in the oil before adding the flour.
    6. Salt and black pepper - Add salt and pepper to taste, but start with a small amount and adjust as needed. Keep in mind that the soy sauce and vegetable broth are already salty, so you may not need as much salt as you think.
    7. Corn starch - Cornstarch is used to thicken the gravy if it's too thin. Mix cornstarch with cold water to create a slurry, then add it to the gravy and whisk until thickened.
    8. Fresh herbs - Fresh herbs like thyme, rosemary, and sage can be added to the gravy for additional flavor. Chop them finely and add them at the end of cooking.

    Substitutions

Cornstarch - You can also use all-purpose flour but do not use self-rising flour or cake flour, as they have different protein content and can alter the texture of the gravy. Potato starch also helps to thicken this flavorful gravy.

Bouillon cubes - you can use veggie broth instead.

Nutritional yeast - yellow miso paste works as a good savory substitute.

    Directions

    1. Add all ingredients to a small saucepan, but don't turn the heat on yet.
    2. Stir until the cornstarch is slightly mixed (it won't completely mix until it heats up).
    3. Turn heat to high and bring to a boil, stirring the whole time.
    4. Immediately turn down to a simmer and keep stirring until the gravy thickens. This should take about 5-6 minutes.
    5. Serve over vegan mashed potatoes or french fries like for a poutine.

    Expert Tips

    • Make sure to stir the gravy constantly while it thickens to prevent lumps from forming.
    • If you'd like to make the gravy more rich, you can always add a tablespoon or two of vegan melted butter.
    • The gravy can keep in your fridge for about a week. When you go to heat it up again, add a splash of water if it's too gelatinous.
    • If you're having a big crown over for a holiday dinner, just make a double batch of this.

    Serving suggestions

This is perfect for pouring over instant pot vegan mashed potatoes, vegan stuffed butternut squash, vegan biscuits, vegan turkey, seitan pot roast, vegan lentil loaf or vegan poutine. It would also be delicious over vegan meatballs or vegan sausages. This is a great recipe to have on hand during the holiday season.

    Storing

    • Fridge: Store the vegan brown gravy in an airtight container in the fridge for up to a week.
    • Freezer: This recipe can be frozen for up to three months.
    • Making Ahead: This recipe can be made ahead of time and reheated before serving.

    Recipe FAQs

    Is vegan brown gravy healthy?

Vegan brown gravy is cholesterol free and can be healthy if it is made with wholesome ingredients and consumed in moderation. It can be a good source of vitamins and minerals if it contains vegetables or vegetable broth.

However, if it is made with high amounts of oil, flour, or salt, it may not be as healthy. As with any food, it is important to consider the ingredients and portion sizes when determining the nutritional value.

    Is this gravy gluten free?

Just use a gluten free soy sauce and bouillon cube to make this quick vegan gravy gluten free. You can also use a gluten-free flour, but corn starch is gluten free as well.
