🍠 Ingredients
- Whole Sweet potatoes - There are a variety of sweet potatoes you can use for this recipe. I prefer the sweeter ones that are orange. Make sure you choose firm potatoes that don't have many bruises or discolorations. Don't get them if they have any soft spots. To keep them good, longer, store them in a dry, dark and cool, but well-ventilated place.
- Oil - I like to use coconut oil because the combination of coconut oil and sweet potatoes is delicious. Avocado oil and extra virgin olive oil also work well. But avocado and coconut oil do better under high heat. Avocado oil keeps a neutral flavor.
- Seasonings: If you want savory sweet potatoes, I love to make a savory spice blend with garlic powder, salt, black pepper and sometimes smoked paprika. Sometimes I'll also add in cayenne pepper for a little kick of heat. I'll give you tips on how to make these on the sweeter side below.

This makes such a versatile side dish because you can stick with the seasonings in this recipe or try out your favorite seasonings.
For more of a sweet flavor: If you would like to enhance the natural sweetness of the sweet potatoes, season with brown sugar, or maple syrup, ground cinnamon and a pinch of salt.
For savory sweet potatoes, try Smoked paprika, Chili powder, Cumin powder, Onion powder, Curry powder or Italian seasoning.

Step one: Peel the skin of the sweet potato. Slice them lengthwise on a cutting board with a sharp knife three to four times.
Step two: Cut the slices lengthwise 3-4 times to create strips.
Step three: Cut the strips in the opposite direction 1-2 inch cubes. Add to a large bowl and season with coconut oil, salt and garlic powder.
Step four: Lay the cubes in a single layer in the air fryer basket. You don't really need cooking spray on the air fryer basket, since the potatoes are oiled. Roast at 400 degrees for about 15 minutes, shaking them halfway through.

Cook this in batches. For best results, make sure not to over crowd the air fryer. It will make it so the sweet potatoes don't get crispy on the outside.
These are best eaten fresh out of the air fryer. They will slowly lose their crispiness as they cool down.
If you'd like to use less oil, feel free to use half the amount. They really don't need that much. The oil just helps for the seasoning to stick and gives the potatoes a more satisfying flavor.
You may have to adjust the cook time, depending on your air fryer. Cook until you get nice crispy edges and slightly caramelized.

These sweet potatoes will lose their crispy texture longer they sit. They are best eaten right out of the air fryer. But, they are good to meal prep ahead of time and put them on salads, or in tacos. Store leftovers in an airtight container in the fridge for about 3-4 days.
After air frying, let the cubes cool down to room temperature. You can then freeze them for up to three months. They will change their texture and won't be crispy, but they're great to throw in a meal in a pinch.

Easy Air Fried Sweet Potato Cubes

- 1 large sweet potato
- 1 tablespoon coconut oil (or avocado oil)
- ½ teaspoon garlic powder
- ⅛ teaspoon salt
Instructions
- Peel then dice the sweet potatoes. Add them to a large mixing bowl and add the oil, salt and garlic powder.1 large sweet potato, 1 tablespoon coconut oil, ½ teaspoon garlic powder, ⅛ teaspoon salt
- Add sweet potatoes to the air fryer making sure not to overcrowd it. Cook this in batches if needed. Roast at 400 degrees for 15-20 minutes, shaking the basket halfway through. If you want your potatoes more crispy, let them cook a little longer.
